What you are looking at
Character oak is English oak with the interesting parts left in rather than cut out — the knots, the medullary rays and the colour movement that a clean specification would reject. It reads as older and more agricultural, and it suits a room with beams and a stone floor far better than clean oak does, where new clean oak can look too new against old stone.
The 8% is yield. More of the log is worked around and more of it is rejected, so less finished timber comes off the same tree.
